Leopold's Meat Platter |
My weekend consisted of a 4 hour bootcamp on Saturday, dinner at Leopold's that evening, and having one of the laziest Sundays one could imagine. The only time I left the house was to purchase groceries and go on my weekly fro-yo binge. I was feeling a bit adventurous and wanted to cook something I've never made before. I found this
recipe on pinterest, and although it isn't super healthy, it was quite delicious. And the best part is, it's pretty foolproof. I altered it a bit (I poached the chicken and doubled the amount called for, I put in less cheese, added more veggies, took out cilantro and sour cream), and it still turned out great. It's super easy and doesn't call for many ingredients. Needless to say, this will be one of my go-to dishes.
